My beet turned out great! Although, I was concerned at first because it sure smelled burned after 15 mins of gas. After 9 hours in the twell the beet was perfectly cooked, but the bottom of the pot was scorched even thought there was still some water in there.

i discovered that if i shakeup the Thermowell pot several times during the gas on period, there is no scorching. all you really want to do is roll those beets around a bit, get them off their hot spot and let them cook again. i'm a big fan of very slow cooking believing that loads of flavors are released and there is a mellowing of flavors also from the long slow process. or, maybe it's just my palette...

I'm glad you added this. I thought my beets burned because of timer problems. They were delicious but the bottom of the pan was burnt. So now I will try the shake, rattle, and roll bit...v

i'm a shaker. practically everything i cook gets a little shake at times....a lot easier than turning things over one by one. i remember my grandmother in her sensible mid heel navy shoes, navy silk dress, silver hair held in place with bobbie pins and an apron, bending over in front of the open oven and saying " und now, a bissle shakin.....yah, is goot" and it was.
